Leeky Lentils and Butter Beans
After reading through several lentil-with-leek recipes and no time to shop, it was fun to kitchen cupboard improvise. Most of the recipes called for sauteeing in olive oil which I avoid heating and opted for a higher smoke point coconut oil.
Coconut oil, however, is decidedly non-neutral in flavor, it conjures Eastern vs. Mediterranean cuisine. It blends well with the tamari sauce, turmeric and ginger.
Sometimes an oil or even one spice can be your touchstone to spectacular flavor blends.
1 cup dried lentils
1 can butter beans or other beans you may already have on hand
1 to 2 Tablespoons coconut oil
1/4 cup or more of water or vegetable broth
1 large or 2 small leeks sliced thinly
2 garlic cloves pressed or minced
2 Tablespoons of Tamari Sauce (more to taste if needed)
1 teaspoon turmeric powder
1/4 teaspoon ginger powder or a little grated fresh ginger
Pepper and a little sea salt to taste (sauce already salty)
1 scallion thinly sliced as a topper
Chopped parsley and or Thai basil for garnish
-Cook lentils in about 2 1/2 to 3 cups simmering water for 35-40 minutes. Test for doneness and add a splash of vinegar at the end or after cooking.
-Saute leeks, garlic and spices in coconut oil over medium heat for 2 minutes.
-Stir in the cooked drained lentils.
-Add the can of butter beans well rinsed and drained.
-Mix well and let simmer a few minutes with broth or water if needed.
-Top with scallions and parsley or Thai basil.
This can be enjoyed as a plant protein main dish or with, chicken, shrimp, fish or beef along with other veggies cooked separately. Pictured with pan sauteed chicken and steamed broccoli for a one dish meal.
